Lasagna Roll Ups

Picky eaters? An easy way to serve multiple types of lasagna at the same meal! Now everyone can have it their way!

As a Mom with three children, my biggest nutritional challenge was finding a meal that everyone would eat. Although all of my children ate fairly healthy foods, they just didn't like many foods in common. Even now that they are grown, it is still a challenge when they come home for meals. But this lasagna recipe makes things much easier!

I make three different fillings. One with meat, mushrooms and tomato sauce, one with just meat and tomato sauce, and finally, one with spinach, mushrooms and pine nuts. The beauty of this recipe is that you can vary the ingredients to whatever your family likes.

What you need:
-Lasagna noodles
-Shredded Parmesan
-Ricotta Cheese
-Marinara or Spaghetti Sauce
-Ground meat, chicken or beef
-Chopped Mushrooms
_Chopped Onions
-Spices
-Muffin pans

FILLING #1:Saute onions and ground beef, adding any spices you like. I usually add minced garlic and some Italian seasoning. Stir in your favorite Marinara or Spaghetti Sauce and bring to a boil. Remove from heat.
FILLING #2: Saute chopped, fresh mushrooms until done to your preference. Place half of the mushrooms into a separate bowl and set aside. To the remaining mushrooms in your pan, add one half of FILLING #1.
FILLING #3: Saute fresh spinach until wilted, add to bowl of remaining sauteed mushrooms with some toasted pine nuts.

  • Cook your lasagna noodles. Simply follow the instructions on the box. Once noodles are finished, lay one of the noodles flat on a large cutting board and begin layering the ingredients. I placed my ricotta down first, then shredded Parmesan and finally one of my fillings.
  • Once the ingredients are layered, roll it up and place the roll upright in a muffin pan. I use muffin pans that hold 6 muffins each so that each pan has the same ingredients.
  • Once you get started, you can probably work with three or four noodles at a time until you have used all of your ingredients.
  • Add extra cheese to the tops, then bake at 350 degrees until cheese melts and browns a little. This takes approximately 15-20 minutes. Everything is pre-cooked so you just want the cheese to melt and flavors to blend.
  • Serve while hot and voila... everyone gets lasagna cooked exactly like they like it!!

If you wish to serve them later, you can place the muffin tins into the freezer for about one hour. Once frozen, pop the roll ups out of the pans and place in large freezer bags labeled with the type of filling. You now have individual servings that can be heated in the microwave for a quick meal later.
