If you like to have fun on April 1st, try fooling your family and friends with food. It can serve the dual purpose of giving you a laugh and getting some healthy food past finicky lips.
My favorite April foolery was the “Let Them Eat Cake” dinner I served to my kids some years back. I wish I’d had my camera ready to capture the looks of sheer delight that crossed their faces when they saw the seemingly scrumptious cake on the meat platter. I garnished it with large scoops of mango, strawberry, and vanilla “ice cream”. They exchanged glances that said, “Cake for dinner!”
But their little faces fell once I cut the cake open to reveal stacked meatloaf iced with mashed potatoes and filled with carrot puree. Adding insult to injury, the ice creams turned out to be sweet potato and beet purees and mashed potatoes. But they ate it all anyway because it looked so cool.
Another time I hollowed out some peeled zucchinis to make thin tubes, which I boiled and used for cannelloni. It was delicious!
