Inspector Catches Employees Handling Food Bare-Handed, Not Washing Hands

Following is a list of five Peachtree Corners restaurants which have been inspected recently by the Gwinnett County's Board of Health.

Inspectors from the Board inspect area restaurants every six months and then grade them based on extensive criteria that include everything from food being stored at proper temperatures to employee hygiene.

Restaurants are required to display these reports in a prominent place for diners to view. This is what we found in a random search of inspections on the county's website.

Name: Chipotle Mexican Grill
Location: 5175 Peachtree Parkway
Inspection Date: Jan. 9, 2014
Grade: 82-B
Comments:
  • An employee was observed donning gloves without washing hands to handle mixed cheese and lettuce at the serving line. Food employees must wash hands before donning gloves to work with food. The employee decided to discard the foods.  Corrected On-Site.  New Violation.
  • Pork and chicken holding on the line below 135F. Hot-held potentially hazardous foods must be maintained above 135F. The employee decided to reheat the chicken and discard the pork.  Corrected On-Site.  New Violation.

  • Food not being cold held properly. Had manager discard foods out of temp because they did not know how long they had been above 41F. Must cold hold food at 41F or cooler.  Corrected On-Site.  New Violation.
  • Food on prep line not hot held properly. Had employee reheat to 165F. Must hot hold food at 135F or warmer.  Corrected On-Site.  New Violation.
  • No sanitizer (Cl) was in buckets. Had employee remake to 100 ppm. Must keep sanitizer at proper strength.  Corrected On-Site.  Repeat Violation.
  • Cooler not functioning properly - Must keep equip in good repair.  New Violation.

Comments:
  • Employee handled sanitizer buckets then put on gloves to handle corn dogs. had employee stop and remove gloves and wash hands before donning new gloves. Employees must wash hands prioir to donning gloves for food service.  Corrected On-Site.  New Violation.
  • Person in charge was not able to answer questions about health policy. Printed new health policy and reviewed with person in charge until he could answer questions. Person in charge must be able to demonstrate knowledge of what needs to be reported and to whom, exclusion and restriction.  Corrected On-Site.  New Violation.
  • Multiple items in prep coolers not below 41F. Foods discarded. All potentially hazardous foods must be cold held at 41F or below.  New Violation.
  •  Inspection report not posted. Most current inspection report must be posted at all times within 15 feet of entrance, 5-7 feet in height and approachable within 1 foot.  New Violation.
  • Employee handled cell phone with her gloves on then handled cookie dough. Employee discarded cookie then removed gloves. Gloves are for a single use only.  New Violation.
  •  Employee phone on prep table. Phone removed. Employee belongings must be kept in a designated area away from food prep, storage areas to prevent contamination.  Corrected On-Site.  New Violation.
  • Facility will have to have a reinspection within 10 days and an additional routine inspection. Fees will apply. Make sure to keep sani buckets off the floor.

  • Observed in-use utensil being stored in a container of water. Utensil was placed in a container of water on the stove with a temperature of 160F. In-use utensils for hot-held potentially hazardous foods shall be stored in a container of 135F water.  Corrected On-Site.  Repeat Violation.
  • Upon entering, observed the back door opened without having a screen to protect against the entry of insects and rodents. Outer openings of a food service establishment shall be protected against the entry of insects an rodents by having solid, self-closing, tight fitting doors.  Corrected On-Site.  New Violation.
