Remarks: Multiple foods in coolers (raw fish, raw chicken, and celery) not covered at time of inspection. Rice had been removed from walk-in cooler and was being held at room temperature and the internal temperature of the rice was above 41 degrees and no time controls in place. Chicken wings had been cooked and left in fryer baskets. Two containers of rice had not cooled to 41 degrees or below after 6 hours from cooking. Thermometer for taking food temperatures not present. Wiping cloths stored in a bucket of water with no sanitizer. Follow-up inpection within 10 days.
