Remarks: Food safety procedures were not being implemented such as: cooling, cooling methods, when to wash, etc. Practices shall be demonstrated on a daily basis and the Person in Charge (PIC) shall be able to ensure the employees are complying with their duties. After engaging in food prep, observed employee go to the handsink and wash hands without using soap, then proceeded to continue prep. Observed the handsink which is frequently used by employees cooking on the grill not stocked with soap. Observed a black mold like substance and pink film located inside the upper chamber of the ice machine. Observed a large container of queso and a large container of macaroni sauce in the walk in cooler cooling over 2 hrs above 70F. Observed 5 containers of chicken batter (which contains egg and milk) in the walk in cooler cooling over 6 hrs above 41F. Observed several containers of chicken batter stacked and tightly sealed in the walk in cooler. Observed large, deep containers of queso and macaroni sauce cooling in the walk in cooler. The queso and macaroni sauce had ice wands stored inside, but they were not placed in the center of the foods. The foods were also placed in the cooler to begin cooling above 135F. Discussed with the person in charge about proper cooling methods. Observed several glasses stored in the bar area in close contact with customers with the rims of the glasses stored up. Follow-up inspection within 10 days

Remarks: Beverage in uncovered styrofoam cup was stored directly next to onions being sliced. Beverage was removed and placed underneath the prep table. Menus do not meet the food safety requirements regarding undercooked foods. Several food items were not being maintained at 41 F or lower: sausage, rigatoni, macaroni, honey dew melon, etc. Foods held past 7 day holding time in refrigeration. Ready-to-eat, TCS foods, stored in the prep coolers, were not labeled or marked with dates. Most recent inspection report was not on display. Knives, spoons, etc were stored submerged in sanitizer between uses. Remove the sanitizer.
