Remarks: Food safety procedures were not being implemented and are repeated such as hygienic practices, cold holding, cooling methods, etc. Practices shall be demonstrated on a daily basis and the Person in Charge (PIC) shall be able to ensure the employees are complying with their duties . At the beginning of the inspection, observed employee eating in the kitchen area. Observed several potentially hazardous foods stored in the walk in cooler and in a prep cooler holding over 24hrs above 41F. Observed several large, stacked, tightly sealed gallons of foods stored in the walk in cooler. Foods were discarded. Observed several in-use wet wiping stored on pieces of equipment and around different places in the food prep area. Observed the prep unit in the kitchen area with an ambient temp of 54F. Potentially hazardous foods were removed from the cooler and discarded. Observed a spray hose at the hand sink. There was no back flow device installed. Observed several flies in and around the kitchen prep area.

Remarks: Multiple potentially hazardous foods not cold held at 41 degrees F or below and no time controls in place. Sliced tomato had not cooled within 4 hours of being sliced. Multiple pans of beans not cooled to 70 degrees F in 2 hours or less. Prep cooler and walk-in cooler ambient air temperature not at 41 degrees F or below.
