Inspector Upgrades Mambo Italiano Score to 99-A

Following is a list of five Peachtree Corners restaurants which have been inspected recently by the Gwinnett County's Board of Health.

The Board inspects area restaurants every six months which are then graded based on an extensive criteria that includes everything from food being stored at proper temperatures to employee hygiene.

Restaurants are required to display these reports in a prominent place for diners to view. This is what we found in a random search of inspections on the county's website.

• Observed old inspection report on wall. New inspection report posted on wall when inspection completed. The most current inspection report must be posted at all times.  Corrected On-Site.  New Violation.
• Replace linen under glasses and liquor bottles with a approved shelf liner (bar mesh)
• Repair leaks in plumbing at hand sinks. Drips from faucets need to be fixed.
• Watch sanitizer level in buckets. At time of bucket change level was below 50 ppm in one bucket.
• Recommend working on walls, floors, and ceiling.
• Continue improvement on temperature monitoring and send temperature logs to health department as required. Temperature records reviewed and system appears to be adequate.

• Raw chicken was over ice in the walk-in freezer. Store chicken below ice. Raw chicken was stored over port. Store raw chicken below pork. Raw chicken was stored over meatballs. Store meatballs over chicken.New Violation.
• No sanitizer was being dispensed in the warewashing machine. Sanitizer bucket was empty. A new one was installed and primed. Sanitizer concentration was 50 PPM available chlorine. Corrected On-Site.  New Violation.
• Ortho Home Defense pesticide was in the establishment. This pesticide is for household use only. Remove it from the facility. Have only a licensed pest control operator dispense pesticides in the food establishment.New Violation.
• Clean forks were placed in a basket without an insert. A basket is not a clean surface. The basket can not be cleaned. Rewash the forks and place them in a clean food grade container. New Violation.

• Several potentially hazardous food items in ice baths were found being held cold at a temperature of above 41 degrees. These items including sour cream, whipped butter, and half and half had been removed from cooler for less then 4 hours and were removed to cool down. All potentially hazardous food items must be held at a temperature of 41 degrees or below.  Corrected On-Site.  New Violation.

• Observed an employee rinse wash gloves after handling raw shrimp and proceeded to do food prep at the same work station. Had the employee wash hands and change gloves. Single-use gloves should be discarded when damaged or soiled.  Corrected On-Site.  Repeat Violation.

• A copy of the certified food safety manager certificate(CFSM) is display in facility. The original copy of the CFSM certificate must be displayed. Please obtain original copy and display it ASAP. Will check back within 10 days.  New Violation. Correct By: 02/01/2014
